Meet the Distiller

We’re delighted to welcome our Head Distiller, Paul Corbett, to the team here at Clonakilty Distillery. Paul joins us from Teeling Whiskey Company, where he was Lead Distiller for more than two years. Before that, he was a Brewer at C&C Group in Co. Tipperary. There, he won gold medals and international champion brewer titles. So needless to say, he knows his stuff.

Passion:

We are so excited to have Paul on board as his passion and love for whiskey and gin is second to none. With a degree in Microbiology and a Masters in Brewing & Distilling from the prestigious Heriot-Watt University in Edinburgh, he also has the expertise to back up it all up.

Although whiskey making is in his blood – Paul’s grandfather worked at Cork Distillers back in the day – he’s looking forward, not to the past, for his inspiration. He said: “I’m really excited about producing something I love and am passionate about myself. I plan to make as many uniquely flavoured whiskeys and gins as I can.”

Paul  added: “It takes a minimum of three years to make whiskey and we’ll have our first batch of unique Clonakilty Whiskey ready for late 2021. While waiting for our own product to mature we have selected some very special casks of mature whiskey. We are blending and finishing in different woods and using our own unique methods. We’re delighted with how that is going and have received a very positive reaction from the small amount of product already offered to the market.”

Big Plans:

Paul plans to experiment with different cask finishes, different grain bills and yeast strains. He is thrilled to be working with the beautiful barley grown on the hilly fields next to Galley Head. He said: “I feel very lucky to have all these amazing elements at my disposal. These are all wonderful, natural ingredients that we get right here on our doorstep. This is a brand new distillery making new whiskey for a new generation of whiskey drinkers. We are also using traditional methods that have stood the test of time, so we know seasoned whiskey drinkers will love it too. The wheels are in motion now and we recently received our fermenters, so it’s all systems go.”
